There once was a girl named Cilantro (pseudonym, obvs). She loved whole grain foods with a passion, eating all whole grain, everything, all the time, every day. But one day she became very sick and very small, and doctors diagnosed her with Celiac’s Disease. That was a sad time for Cilantro, who found all of her favorite foods ripped away from her in the period of a few weeks. There were tears. There was wailing and gnashing of teeth.
Note the dramatic pause. Times were truly tough for our heroine. But she persevered!
After adventuring with pre-made gluten-free baked goods that were high in sugar, but low in taste and nutrition, she finally accepted that, perhaps, whole grains were not a part of her future. So she moved on, eating oatmeal and popcorn and believing that her baked good life was behind her.
Spoiler alert: It was not so! Easy gluten-free oat bran muffins were in Cilantro’s future!
