Carby Pumpkin Cookies for the Road

I'm a pediatric physical therapist by day. Building mileage up again as I work through a persistent case of plantar fasciitis. Darn PF has slowed my progress towards my running goals but has also made me grateful for every day that I am able to run.

Looking for a carb-loaded snack to bring on your next running road trip? How about a festive recipe for low-fat, high carb, vegan, soft, delicious pumpkin cookies?

Pumpkin cookies. So tasty, I accidentally took a bite before snapping a photo.

Here is what you’ll need:

-1 1/2 cup whole wheat pastry flour
-1/4 tsp salt
-1/2 tsp baking soda
-1/2 tsp baking powder
- 1 tbsp cinnamon
1/4 tsp ginger
1/4 tsp nutmeg (spices collectively known as pumpkin pie spice)
-1/2 cup brown sugar, coconut sugar, other sugar or even maple syrup/honey
-1/3 cup oil- recommend extra virgin olive oil or melted coconut oil
-1 3/4 cup pumpkin puree (not pumpkin pie mix)
-1/2 tsp vanilla
-1/3 cup mix ins- chocolate chips, berries, walnuts, etc
Drop with a spoon or cookie scoop onto a cookie sheet about 1 in apart, Bake at 350 for 15 minutes. The cookies will be soft and similar to muffin tops. And delicious. A good combo of simple (sugar) and complex (wheat, pumpkin) carbs.
I like to mix in chocolate chips, but if you are making these to share with non-chocolate loving friends, try some berries or dried fruit. Then reconsider why you are friends with people who don’t like chocolate…
Makes about 22 cookies. The chocolate chip version has 99 calories, 14 grams of carbs, 5 grams of fat, 1 gram of protein per cookie. Without chips, the cookie has 85 calories, 13 grams of carbs, 4 grams of fat, 1 gram of protein.

    These look delicious! I have some leftover pumpkin and my mom recently switched to a vegan diet. Definitely making a test batch for her and then some leading up to my marathon!
